PurelyPope Microwave English Muffin
This recipe was adapted as a quicker, on the go version of my PurelyPope Bagels, which you can find here! But this? It’s the easiest, Microwave English Muffin recipe that is both high in fiber and protein, to keep you fueled throughout your busy day!
Personally, when I was working in an office, I was always rushing out the door in the AM. I’m a huge fan of my sleep and I cannot sacrifice my healthy eating either. This is the best of BOTH worlds. In the essence of time, let’s hop right int it!
English Muffin Done Right!
When looking at a nutrition label, it’s about much more than just the calories. Here’s what I look for when both making recipes, as well as buying packaged products:
- CLEAN Ingredients: Clean ingredients are ALWAYS important. If you can’t pronounce an ingredient, you probably don’t want to be eating it.
- MINIMAL Ingredients: The fewer ingredients, the better in my book!
- Macronutrients: This is the last thing that I look at, because I don’t count calories. If the product passed the first 2 tests, then it most likely will have good macros – healthy fats, some protein (depending on the product), carbs and fiber with those carbs.
These microwave english muffins check ALL of the boxes on the list above. Plus – they’re insanely easy as well. The most important part, right?! Healthy eating doesn’t have to be boring OR difficult.
English Muffin Specifics!
This Microwave English Muffin recipe calls for eggs – which you know I’m going to tell you to always go for organic if possible – or even better, from a farmer’s market. For protein powder, I love the Bob’s Red Mill Unflavored Protein & Fiber Nutritional Booster.
As always, I will give you the macronutrient information, but as I mentioned above, I’m a big believer that if you’re focusing on clean, real ingredients, you don’t need to worry about calories and don’t personally count calories. But in the case you want them, these english muffins ring in at 220 cals per serving, 12g fat, 12g carbs, 7g fiber & 17g protein (using the Bob’s Protein Powder.) Ingredients
- WET INGREDIENTS:
- 1 Egg
- 3 Tbsp Water
- DRY INGREDIENTS:
- 2 Tbsp Protein Powder
- 1 Tbsp Almond Flour
- 1 Tbsp Flax Seed Meal
- 1/2 Tsp Baking Powder
- Sprinkle Salt
- TOPPING:
- Everything But the Bagel Seasoning
Instructions
Muffin Me!
- Whisk wet ingredients in a bowl.
- Stir in dry ingredients well.
- Grease a coffee mug or ramikin – I like avocado 🥑 oil spray!
- Add batter to the mug & microwave for 2-2.5 minutes.
- When the mug comes out, I like to slice it into 3 sections and toast it, then enjoy!
